           Classic Yunnan ham mooncakes

                                               The quintessential Yunnan moon-
                                            cake  is  undoubtedly  the  classic
                                            Yunnan ham mooncake. The ham is    a singular delight
                                            regarded as the “soul” of these moon-
                                            cakes, as the quality of the ham and
                                            the craftsmanship directly impact the
                                            final product. For this delicacy, pre-
                                            mium ham is cooked and diced, then   一枝独秀的
                                            mixed with honey, sugar, and cooked
                                            flour to create a flavorful filling. This
                                            mixture is encased in a pastry made
                                            from lard, powdered sugar, and honey
                                            before being baked to perfection. The   云南月饼
                                            result is a mooncake with a golden,

                                               Yunnan is also known for its flow-
