From September 13 to 15, the 2 Yunnan International Catering

and Prepared Dishes Industry Expo was held at the Kunming Dianchi
International Convention and Exhibition Center. The event celebrated
Yunnan’s rich culinary culture, offering a delightful array of flavors
for both residents and visitors in Kunming.
Spanning an exhibition area of 30,000 square meters, the event
showcased a diverse array of products, including specialty ingredients
and seasonings from Yunnan, prepared dishes, hot pot ingredients,
rice, flour, other grains, cooking oil, frozen foods, meat and aquatic
products, beverages, agricultural goods, snacks, and processing and
packaging machinery. This extensive selection catered to a wide
range of consumer preferences. “Yunnan has a rich culinary culture.
This year, we have especially highlighted ethnic specialty dishes and
banquets, showcasing the multifaceted nature of Yunnan cuisine and
helping more people appreciate Yunnan’s culinary offerings,” said
Jiang Yabi, President of the Yunnan Cooking Association.
In recent years, Yunnan cuisine has gained popularity, becoming
a favorite among consumers. “I once enjoyed golden coin ham in Xu-
anwei, and I’ve been longing to experience that flavor again,” said a
professional visitor from the hospitality industry as he inquired at the
booth of Xuanwei Yang’s Jiangxin Ham Food Co Ltd. Upon hearing
his comment, the company’s general manager, Yang Yanping, offered
him a plate of freshly prepared golden coin ham to taste.
Yang Yanping explained that in recent years, their company has
focused on aligning with consumers’ evolving eating habits by devel-
oping a more diverse range of ham products, particularly in intensive-
ly processed options. To enhance product competitiveness, the com-
pany established a dedicated R&D department and collaborated with
renowned chefs from the hospitality industry. As a result, Xuanwei
ham is increasingly recognized not only by consumers in Yunnan but
also by those in provinces like Jiangsu, Zhejiang, Shanghai, Guang-
dong, Guizhou, Sichuan, and Hunan.
Yunnan’s culinary offerings have attracted merchants from beyond
the province. Fujian native Wu Weiming first visited Kunming in 2001,
and inspired by his insights into food trade and a passion for Yunnan cul-
ture, he decided to settle in the province to pursue a career in food com-
merce. He has a particular fondness for Yunnan rice noodles and founded
Yunpinxian Food Co Ltd in 2020, specializing in a series of crossing-the-
bridge rice noodle products. Wu believes that as the “stay-at-home econ-
omy” grows, competition in the convenient rice noodle sector intensifies,
but he maintains that the key to success remains the taste. “If the flavor
isn’t good, your mouth won’t be fooled.”
Wu noted that Yunnan offers a rich variety of ingredients and di-
verse culinary traditions, which, from an outsider’s perspective, give
Yunnan cuisine a unique sense of mystery. Curiosity is the first step in
attracting customers. The incorporation of authentic Yunnan flavors—
such as small pot braised pork, spicy termite mushrooms, chrysanthe-
mum chicken, and Dai-style sour and spicy dishes—caters to a wide
range of consumer preferences. His company has also launched a plant-
based series to align with global trends towards healthy eating and vege-
tarianism. “From the very beginning, we have targeted overseas markets,
and our products have gained popularity in North America, Europe, and
Australia. Currently, the overseas market accounts for about 65 percent
of our share,” Wu remarked, highlighting the company’s commitment to
promoting traditional Yunnan culinary culture worldwide.
Hunan Yucheng Food Co Ltd, established in 2009 in Changsha,
specializes in developing and producing prepared dishes centered
around braised pork. One of its brands, “Master Xu,” employs a com-
prehensive online and offline sales model to penetrate the Chinese
market, partnering with numerous chain restaurants across the 16
prefectures and cities of Yunnan. Since 2021, “Master Xu” prepared
dishes have also expanded into international markets, exporting to
Southeast Asian countries such as Thailand, Laos, and Vietnam.
