                                                                                  Mango salad                                        凉拌芒果

                                                                                  Yunnan boasts a wealth of delicacies, with chi-
                                                                                li-dressed fruit salads enjoyed daily. A mango salad
                                                                                typically features green, unripe mangoes, which
                                                                                are peeled and cut into thick strips. These strips are
                                                                                 then dressed with pointed chili, salt, sugar, oyster
                                                                                 sauce, soy sauce, coriander, and other condiments.
                                                                                 The result is a mango salad that is simultaneously
                                                                                 sour, sweet, spicy, and salty, making it the perfect
                                                                                 appetizer to beat the summer heat. Additionally,
                                                                                 green mangoes can be combined with vermicelli,
                                                                                shrimp, plums, pineapple, and more to create a re-
                                                                                freshing and delicious salad.


                                                                                  Stir-fried mango                                     炒芒果


                                                                                Stir-fried mango with pork or beef is a
                                                                             common dish on the tables of Yunnan res-
                                                                            idents. Green mangoes are cut and stir-fried
                                                                           with pork or beef, resulting in a delightful
                                                                           blend of refreshing mango aroma and savory
                                                                          meat flavor, which can wonderfully stimulate
                                                                         your appetite. In Yuanjiang, Yuxi, stir-fried mango
                                                                        with salted duck eggs is a local delicacy. The salt-
                                                                      ed duck eggs are fried in oil until the yolks slightly
                                                                     dissolve, then mixed with sweet, juicy ripe mangoes,
                                                                    creating a rich texture and novel flavor.

                                                                 Mango broths are also popular in Yun-
                                                              nan. In Jinggu Dai and Yi Autonomous
                                                             County of Pu’er City, locals use the unique
                                                             unripe Aroemanis mangoes to make a stew
                                                             with tilapia and various condiments such
                                                             as prickly ash leaves, Myanmar coriander,
                                                             and peppermint. The combination of the
                                                             mango’s freshness, sourness, and sweetness
                                                             with the tender flesh of the tilapia creates
                                                              a marvelous flavor. Each bite offers a
                                                              long-lasting and delightful aftertaste.


                                                                                  Deep-fried mango                                   酥炸芒果


                                                                      Deep-fried mango is a specialty of Mengla Township in
                                                                    Longling County, Baoshan City. Mango strips are coated with
                                                                      egg and flour, then deep-fried until golden brown. When you bite
                                                                       into them, the crunchy outer layer contrasts beautifully with the
                                                                         sour inner layer, creating a unique and delicious experience.
                                                                           The locals take their creativity further by using mangoes
                                                                             in various dishes. For instance, after deep-frying pork
                                                                               ribs, they use mango instead of vinegar to create
                                                                                 unique mango-flavored sweet and sour ribs.
                                                                                    Each bite of this dish offers the tenderness
                                                                                      of the ribs combined with the sweetness
                                                                                         and pleasant aroma of the mango.
