The world of dairy products offer a wealth of flavors: grass-
land cheeses, plateau butter, milk skin, milk curd cakes, and
double-skin milk puddings, all delicious. In Yunnan, however, a
distinctive dairy creation takes center stage. Rubing, a curd cake
made from sheep or cow’s milk, is a creamy white or slightly yel-
low delight. With its dense texture and rich, mellow dairy aroma,
it is not just an indispensable ingredient on Yunnanese tables—
it’s “white gold,” deeply rooted in local customs.
奶制品的世界从来不缺传奇,草原的奶酪、高原的酥油,奶皮子、奶
豆腐、双皮奶……每一样都十分美味。在云南,一盘羊乳或牛乳凝成的乳
饼,色泽乳白或微黄,质地密实,散发着浓郁醇厚的奶香,是云南人餐桌
上不可或缺的独特食材,更是承载着浓厚地方风情的“白黄金”。
